Sweet potato brownies

If there is one recipe that has convinced every single eater, it would be this one. These sweet potato brownies are my go to recipe whenever I’m invited to a birthday. Nobody has ever realised how healthy they are. Just don’t tell them and be happy to serve a vegan treat which is super rich, nourishing and incredibly tasty at the same time! 😉
Here you go. You’ll need:
- 600 gr sweet potatoes (around 3 pieces)
- 10 medjool dates, pitted
- 8 tablespoons maple syrup (oder agave)
- 4 tbs coconut sugar
- 150 gr grated almonds
- 120 gr oats (put in your blender to make flour or use normal flour instead, f.e. spelt flour)
- 4 tbs melted coconut oil
- big pinch of salts
- 1,5 teaspoons of psyllium seed husks
- 7 teaspoons raw cacao powder
- 1 package baking powder
- 80 gr pecan nuts
- 100 gr dark vegan chocolate (70% cacao or more)
Chop up the sweet potatoes in pieces and put in the preheated oven (180 degrees C) for 25 min.
Now blend up the sweet potato pieces together with the dates in your food processor. Add in the agave syrup, cacao powder, almonds, oats, cinnamon and salt. Mix again and add in the baking powder and vanilla. Stir well.
As as next step chop up the walnuts and chocolate into clusters and fill 2/3 of them into the bowl and stir. The rest you heat together with some agave syrup in a pan until the nuts are caramelized.
Put the dough on a baking sheet that you layer with some coconut oil. On top you put the caramlized walnuts. Bake the bronwies in the oven at 180 degrees C for 30 minutes. Allow to cool down and store in the fridge overnight. Enjoy them the next morning! You can keep them in the fridge for up to 1 week.
